My oldest kiddo recently was recovering from oral surgery and on a liquid diet, which gave me an opportunity to try out a new recipe! 

This creamy beef taco soup is great for a cold, winter day! It’ll be a crowdpleaser for sure!

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 (10 oz) cans rotel 
  • 1 (8 oz) package cream cheese OR 1 cup heavy cream 
  • 1 packet taco seasoning 
  • 1 (32 oz.) can beef broth 
  • Optional toppings: shredded cheese, sour cream, guacamole 

Directions

  1. Brown ground beef and onion.
  2. Add taco seasoning to meat and onions.
  3. Put beef broth, cream cheese, rotel and beef mixture in crockpot.
  4. Heat on low for 4 hours.
