My oldest kiddo recently was recovering from oral surgery and on a liquid diet, which gave me an opportunity to try out a new recipe!
This creamy beef taco soup is great for a cold, winter day! It’ll be a crowdpleaser for sure!
Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 2 (10 oz) cans rotel
- 1 (8 oz) package cream cheese OR 1 cup heavy cream
- 1 packet taco seasoning
- 1 (32 oz.) can beef broth
- Optional toppings: shredded cheese, sour cream, guacamole
Directions
- Brown ground beef and onion.
- Add taco seasoning to meat and onions.
- Put beef broth, cream cheese, rotel and beef mixture in crockpot.
- Heat on low for 4 hours.
