Back to school can be a difficult time to come up with quick and easy but also HEALTHY meals! Here is a fave recipe that is even approved for our 8-day jumpstart! I love that tons of yummy recipes are provided to you just for being a member of our wellness team!
Ingredients
- 2 cups zucchini, peeled and cubed
- 2 cups bell peppers, cut into 2-inch pieces
- 2 cups broccoli florets
- 1 large red onion, sliced
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 8 chicken sausages (could also use turkey sausage), cut into 1/2 inch slices
- 1 teaspoon red pepper flakes, optional
Directions
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper. Place zucchini, bell peppers, broccoli and onion in a bowl, and toss with olive oil. Spread out in one layer on a baking sheet. Season with salt and pepper.
- Roast vegetables for 15 to 20 minutes.
- Remove the baking sheet from the oven and turn the vegetables. Add sliced sausage to cooked vegetables. Roast an additional 10 minutes, until just browned.
- Remove the sheet pan from the oven and top with roasted red pepper flakes.
- Serve immediately.
