I recently tried out a couple new recipes using my FAVORITE protein powder — Xyngular’s Lean! My youngest daughter even dolled them up with a Halloween theme to take to a sleepover party with her new friends!
They are fun, healthy snacks that are super easy to make with no cooking involved. They include our yummy Xyngular protein powder and just a few simple ingredients that we already had in our pantry! I hope you enjoy them!
Pumpkin Cookie Protein Balls
Ingredients:
- 1 cup rolled oats
- 1/2 cup pumpkin purée
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/2 cup Xyngular Vanilla Lean protein powder
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 cup mini chocolate chips or sprinkles (optional)
Directions:
- In a large bowl, combine pumpkin purée, almond butter and maple syrup.
- Add oats, protein powder, pumpkin pie spice and cinnamon, stirring until well mixed. Fold in chocolate if using chips.
- Roll the mixture into bite-sized balls. Roll in sprinkles if using them.
- Place on a lined baking sheet and refrigerate for 1 hour to firm up.
Peanut Butter Pumpkin Protein Balls
Ingredients:
- 1/2 cup peanut butter
- 1/2 cup pumpkin purée
- 1 cup rolled oats
- 1/2 cup Xyngular Vanilla Lean protein powder
- 1/4 cup honey
- 1 tsp pumpkin pie spice
- 1/4 cup mini chocolate chips or sprinkles (optional)
Directions:
- In a large mixing bowl, combine the peanut butter, pumpkin purée and honey and mix until smooth.
- Stir in the rolled oats, protein powder and pumpkin pie spice until well incorporated. Fold in chocolate if using chips.
- Roll the mixture into bite-sized balls. Roll in sprinkles if using them.
- Roll the mixture into bite-sized balls and roll in chocolate if using sprinkles.
- Place on a lined baking sheet and refrigerate for 30 hour to firm up.
