Who said eating healthy has to be bland?!

We recently had sautéed polish sausage, baked cauliflower mac and cheese (recipe below) and sugar-free pumpkin mousse (recipe here), and it was all was sooo good! What a yummy low-carb dinner and so simple!

Ingredients 

  • 1 head cauliflower, cut into florets 
  • 3 cups half and half
  • 1 bag shredded Velveeta  
  • Salt and pepper

Directions

  • Boil 2 quarts of water, and cook the cauliflower in it for about 5 minutes. Drain it. 
  • Meanwhile, bring the half and half to a simmer in a small pot over medium low heat. 
  • Whisk in the cheese gradually. 
  • Season with salt and pepper to taste. 
  • Spray a baking dish with cooking spray. Put the cauliflower in, and pour the cheese sauce on top. 
  • Sprinkle with more Velveeta and cheddar, if you want.
  • Bake at 425 for about 20 minutes.
