My friend Patty told me about crockpot crack chicken today. It has the yummy stuff … bacon, cheese, ranch … and things I already had in my kitchen, so it didn’t even require a trip to the store.
I was intrigued so I tried the recipe … OMG, yes!! So simple. So easy. Sooo delicious!! And … it’s LOW CARB and KETO approved!!
Ingredients
- 2 pounds boneless skinless chicken thighs and/or breasts
- 1 oz. packet ranch seasoning mix
- 16 oz. cream cheese
- 8 slices bacon (sliced, cooked and drained) or a bag of real bacon bits
- 1 1/2 cups shredded cheddar cheese
Instructions
- Add the chicken to the slow cooker. Sprinkle over the ranch seasoning mix. Place the cream cheese on top of the chicken.
- Cover and cook on LOW for 7 hours without opening the lid during the cooking time.
- Shred the chicken (I did this right in the slow cooker with 2 forks.) Stir the cooked cream cheese into the shredded chicken. Top with bacon. Sprinkle with cheese. Cover for 10 more minutes to allow the cheddar cheese to melt.
