Omg!! This. Is. Incredible.

My friend Patty told me about crockpot crack chicken today. It has the yummy stuff … bacon, cheese, ranch … and things I already had in my kitchen, so it didn’t even require a trip to the store.

I was intrigued so I tried the recipe … OMG, yes!! So simple. So easy. Sooo delicious!! And … it’s LOW CARB and KETO approved!!

Ingredients

  • 2 pounds boneless skinless chicken thighs and/or breasts
  • 1 oz. packet ranch seasoning mix
  • 16 oz. cream cheese
  • 8 slices bacon (sliced, cooked and drained) or a bag of real bacon bits
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Add the chicken to the slow cooker. Sprinkle over the ranch seasoning mix. Place the cream cheese on top of the chicken.
  2. Cover and cook on LOW for 7 hours without opening the lid during the cooking time.
  3. Shred the chicken (I did this right in the slow cooker with 2 forks.) Stir the cooked cream cheese into the shredded chicken. Top with bacon. Sprinkle with cheese. Cover for 10 more minutes to allow the cheddar cheese to melt.
