Love cream of mushroom soup in a bowl or in recipes but dislike all the carbs and additives? Then this yummy recipe is for you!
It’s low carb, full of healthy fats and delish!
Ingredients
- 1/4 cup butter
- 12 ounces sliced mushrooms
- 1/2 cup diced onions
- 1 tablespoon thyme
- 1 teaspoon minced garlic
- 4 cups chicken broth
- 3 ounces full-fat cream cheese
- 1 cup heavy cream
- Salt and pepper to taste
Directions
- Melt butter in saucepan. Add mushrooms, garlic, thyme and onions.
- Cook about 7 minutes or until mushrooms have released all of their juices.
- To the above, add chicken broth and cream cheese. Whisk until all melted and mixed. Season to taste with salt and pepper.
- Wisk in heavy cream.
- Simmer on low 10 to 15 minutes.
Note: You also can add all ingredients to a crockpot and cook on high for 2 hours.
