Love cream of mushroom soup in a bowl or in recipes but dislike all the carbs and additives? Then this yummy recipe is for you!

It’s low carb, full of healthy fats and delish!

Ingredients

  • 1/4 cup butter
  • 12 ounces sliced mushrooms 
  • 1/2 cup diced onions
  • 1 tablespoon thyme 
  • 1 teaspoon minced garlic
  • 4 cups chicken broth
  • 3 ounces full-fat cream cheese 
  • 1 cup heavy cream
  • Salt and pepper to taste

Directions

  1. Melt butter in saucepan. Add mushrooms, garlic, thyme and onions.
  2. Cook about 7 minutes or until mushrooms have released all of their juices.
  3. To the above, add chicken broth and cream cheese. Whisk until all melted and mixed. Season to taste with salt and pepper. 
  4. Wisk in heavy cream. 
  5. Simmer on low 10 to 15 minutes.

Note: You also can add all ingredients to a crockpot and cook on high for 2 hours.
