Back to school can be a difficult time to come up with quick and easy but also HEALTHY meals! Here is a fave recipe that is even approved for our 8-day jumpstart! I love that tons of yummy recipes are provided to you just for being a member of our wellness team!

Ingredients

  • 2 cups zucchini, peeled and cubed
  • 2 cups bell peppers, cut into 2-inch pieces
  • 2 cups broccoli florets
  • 1 large red onion, sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 chicken sausages (could also use turkey sausage), cut into 1/2 inch slices
  • 1 teaspoon red pepper flakes, optional

Directions

  1. Preheat the oven to 400 degrees.
  2. Line a baking sheet with parchment paper. Place zucchini, bell peppers, broccoli and onion in a bowl, and toss with olive oil. Spread out in one layer on a baking sheet. Season with salt and pepper.
  3. Roast vegetables for 15 to 20 minutes.
  4. Remove the baking sheet from the oven and turn the vegetables. Add sliced sausage to cooked vegetables. Roast an additional 10 minutes, until just browned.
  5. Remove the sheet pan from the oven and top with roasted red pepper flakes.
  6. Serve immediately.
